A Thai yellow curry that’s punchy and packed with SO much good stuff we don’t think there’s enough space here to say it all (but here we go anyways). Tofu, broccoli, red capsicum, baby corn, bamboo shoots and roasted cashews with a satisfyingly tingly level of chilli that keeps you topping your rice with more golden coconut sauce as you go.
To enjoy this Thai vegetable and tofu curry with cashews, simply heat it up on the stove or in the microwave. Serve it over a bed of steamed rice. Make sure to stir well before eating to evenly distribute all the delicious ingredients. There are no special storage requirements, just keep it in the fridge and consume within a few days. And it’s super easy to clean up the dish – just wash it with some soapy water.
